Do I have to file bartending wages that I did not make minimum wage on?

The answer is yes.  The IRS considers all moneys received as compensation for services as "income," regardless if they did not meet Federal Minimum Wage Standards.

 

IRC S61 defines gross income as "compensation for services, including fees, commissions, fringe benefits, tips, etc."
