I live and operate an LLC in New Jersey, do all work in New Jersey for a California client. Do I need to file a non-resident California tax return?

No, you do not need to file a tax return in California as you do not have any tax nexus there and based on the fact pattern you provided, you did not physically go there to perform work. Specifically, California state code indicates that if the nonresident's business is carried on both within and outside California and the part outside California is separate and distinct from the part within California, only income from the part conducted within California is California source income. Thus, you have no business in California for tax purposes.
